In 2001, Rachel was chosen as a spokesperson for the American Dietetic Association, representing over 60,000 Registered Dietitians to the national media. She has had exposure in all types of media including TV, print and radio.

Rachel has appeared in many national print, radio and TV outlets. She has been quoted in newspapers such as The Washington Post and USA Today as well as quoted in many national magazines such as Ladies Home Journal, Glamour, Fitness, Parent's, Shape and Oxygen. Rachel has been heard on NPR and has appeared on CNN and Atlanta's 11 Alive and Fox 5 News.

In addition to her media work, Rachel is also a corporate media spokesperson. She is currently a spokesperson for Wendy's Mom-RD program, Kellogg's Snacktivate program and Glaceau Vitaminwater.
