Lentil Love! The soup that you will make again and again!

Lentils— please don’t stop reading!  If you think this is some bland, brown, mushy lentil soup recipe— YOU ARE WRONG!  This is actually heaven in a bowl, a party for your senses and an elixir for anything that ails you.  Okay, maybe I’m hyping this soup a little too much, but if I can get one person to try this soup who has never tried lentil soup or is not a lentil lover, then I ALL my praises will not be in vain.

From a nutrition perspective, you can’t get healthier than lentils (otherwise known as pulses– which is the term for all foods legumes).  Lentils are high in protein and fiber, low in fat, sodium and inexpensive as well as cholesterol free (it’s a legume– there is no cholesterol in plant based foods!).

It’s super fast to make because the recipe uses red lentils which cook much quicker than brown or green, and fills you up like a burger because of the fiber (okay maybe not a burger, but you get my point).  The only special ingredient this requires is RED LENTILS.  Yes– RED, not brown, green or a variety, just red.  Find these beautiful pulses at Whole Foods, Fresh Market, Sprouts or any other specialty stores.  Follow this link to the recipe, take out your soup pot, follow the recipe exactly and thank me later!
